Jonny’s Simple Stir Fry

My latest recipe, chosen by you is a delicious tuna stir fry. Packed full of goodness and flavours of the orient, this recipe is simple, quick and above all, delicious! If you don’t fancy the fish, just leave it out, it’s as simple as that.

Stir fry ingredients:

Bean sprouts 100g
Egg noodles 200g
Radish 2 (sliced)
Red cabbage 100g (chopped)
Savoy cabbage 100g (chopped)
Carrot 2 (thinly sliced)
Apple 1 (thinly sliced)
Baby leaf salad or spinach 100g

Stir Fry Sauce ingredients:

Soy sauce 8 tbsp
Mirin 4 tbsp
Honey 2 tbsp
Ginger purée 1 tbsp
Garlic purée 1 tbsp
Sesame or olive oil 1/2 tsp
Lemon 1 tsp

Added tuna ingredients

Tuna 2 steaks (roughly 200g)
Olive oil 1 tbsp
Sesame seeds 1 tsp
Black nigella seeds 1 tsp

Method

For the noodles:

1. Cook the egg noodles as per packet instructions and drain all the water out

For the sauce:

2. While the noodles are cooking, add all the sauce ingredients to a saucepan
3. Whisk together until combined
4. Bring the saucepan up to a medium heat and take off the heat once hot through

Now simply combine it all together with raw vegetable ingredients:

5. Add the cabbage, bean sprouts, carrot, apple, salad to a bowl and mix
6. Then add the cooked noodles and pour over the sauce
7. Give it a final mix to combine and then serve on to each plate

Easy as that! You can finish with the sliced radish before serving.

If you want to serve with tuna, follow these simple steps:

1. Mix the nigella and sesame seeds on a plate
2. Coat each side of the tuna in the seeds mix
3. Bring a frying pan to a high heat and add a splash of olive oil
4. Once the pan is hot, fry the tuna on each side for 30s – 1 min (dependent on how thick the tuna steaks are)
5. Serve on top of the mixed stir fry!
